Vitamix Chocolate “Ice cream”

INGREDIENTS

2 frozen bananas
1/4 cup raw cocoa powder
1/3-1/2 can of full fat coconut milk
3-4 dates
Several drops of stevia  
1 cup ice cubes  

METHOD

  1. Blend everything in Vitamix. It’ll be very thick so use the tamper and push it down hard. (If you have a Vitamix that already has ice cream mode, use it.) If too thick add more coconut milk to your liking.
    The less liquid you use, the thicker the ice cream will be, but you need to find the right proportion for your blender to be able to mix. It'll require some muscles to push down the content.

  2. Top with fruits, coconut flakes or cacao nibs and enjoy!

Vitamix Mango Sorbet

INGREDIENTS

2 frozen bananas
2 cup organic frozen mango*
1/3-1/2 can of coconut cream or full fat coconut milk
Several drops of stevia  
1-2 cups ice cube

METHOD

  1. Blend everything in Vitamix. It’ll be very thick so use the tamper and push it down hard.  (If you have a vitamix that already has icecream mode, use it.)  If too thick add more milk or water to your liking.  

  2. Top with fruits, coconut flakes and enjoy!

Apple-Sweet Potato Stew

INGREDIENTS

1 sweet potato
2 apples (Granny Smith or other tart apples)
1 Tbsp coconut oil
Juice from ½ lemon
A few drops of stevia
Cinnamon and salt

METHOD

  1. Peel and cut potatoes and apples in 1cm chunks.

  2. Saute the potatoes and apple with coconut oil until they are well coated

  3. Add enough water to cover, and add lemon juice

  4. Cook until soft, season with salt, cinnamon and stevia.

Coconut & Chia Seed Pudding

INGREDIENTS

1/4 cup shredded unsweetened coconut
1/4 cup chia seeds
3/4 cup full fat coconut milk
1/2 cup coconut water
1 tsp pure vanilla extract
1/4 tsp Himalayan salt
1/2 cup fresh raspberries
Drops of stevia

METHOD

  1. In a small bowl or Mason type glass jar, add coconut, chia seeds, coconut milk, coconut water, vanilla, stevia and salt and mix until very well combined.

  2. Place in the refrigerator and allow to rest for at least 2 hours

  3. Serve with fresh rapsberries or other fruit of your choice

Chocolate Chia Seed Pudding

INGREDIENTS

3-4 Dates (pit and chop)
2 T cocoa powder
1/4 cup chia seeds
3/4 cup full fat coconut milk
1/2 cup water
1 tsp pure vanilla extract
1/4 tsp Himalayan salt
Topping*
*fresh berries, bananas,  coconut flakes,  cacao nibs

METHOD

  1. In a small bowl or Mason type glass jar, add coconut milk, water, chia seeds, cocoa powder,  vanilla, chopped dates and salt and mix until very well combined.

  2. Place in the refrigerator and allow to rest for at least 2 hours

  3. Serve with topping of your choice.
